Strange Curry


Cooking is a little challenging when you have a cold. I started out making minnestrone but I couldn't taste anything and I threw a bunch of strange things in the pot. I wound up with this:

Vegetable Peanut Curry:


4 cups low-sodium vegetable broth
2 cups carrot juice
1 can of no salt diced tomatoes
3 carrots
1 yellow onion
3 stalks of celery
1 leek
1/2 a bunch of swiss chard
1/2 a head of savoy cabbage
3 Tablespoons of red curry paste
1/4 cup of peanut butter
black pepper to taste
red pepper flakes to taste

Simple, spicy and altogether not a bad dinner.

haha this is the BEST way to cook. i'm amazed you could remember everything. i often cook in this same fashion, come up with a delicious masterpiece, and then forget when i put in it!
